Everyday low fat carrot cake

Little while ago I became a bit sick for few days and even though I didn’t care for food much I did have one craving..carrot cake.

Soo I decided to make fast, simple,  low fat carrot cake from what ever I had in my house that time and it turned out so delicious that I have started to make it every time we juice, so every few days.

ingridients are : 

  1. 4 cups of carrot pulp
  2. 1 cup of raisins
  3. 1/2 cup of raw pumpkin seeds ( or nuts/ seeds of your choice)
  4. 6 small ripe bananas
  5. 1 Tbs of cinnamon powder
  6. 2 Tbs of fresh lemon zest
  7. 1 Tbs of vanilla extract
  8. 1 tsp-1 Tbs of lemon juice

Put your carrot pulp in the bowl and add cinnamon to it. Grind your pumpkin seeds in coffee grinder or vitamix blender until flour like and add to the bowl, mix well. Put bananas, vanilla and lemon zest and juice into blender and blend until smooth, then add raisins and blend until raisins are cut small.

Mix half of this sauce into carrot pulp and then put your carrot mix into cake pan pushing it down evenly. When that’s done us over half of the sauce as icing. Cover your cake and let it sit in the fridge for about 1-2 hours and then it is ready to eat 🙂 .
