Low fat raw vegan malai kofta

Malai kofta

My husband used to love malai kofta so when we had been raw vegan for a while I decided to make raw version for him and he absolutely loved it! 😉

this recipe uses freeze dried peas and corn which helps it to keep it lower fat and yummi plus it takes only about 3-4 hours to dry the balls in dehydrator since I am not big fan of overnight dehydrating 🙂 . You can find freeze dried fruits and veggies in many natural food stores or just order online.

Recipe makes about 24 balls and usually if we decide to eat entire patch then I would have to double the sauce recipe.

Malai kofta balls:

  1. 3 medium sized zucchinis
  2. 1 medium sized jicama
  3. 2 T of psyllium husk powder ( or ground chia or flax)
  4. 1t of garlic powder
  5. 1 t of ginger powder
  6. 1t of cumin powder
  7. 1/2 t of salt
  8. 1/4 cup of raw pistacios
  9. 1cup freeze dried peas
  10. 1 cup freeze dried corn


  1. 1 red bell pepper
  2. 1 garlic clove
  3. 2-3 tomatoes
  4. 1/2 medium thickness coconut meat
  5. 1t of cumin powder
  6. 1 t of curry powder
  7. 1 t of garam masala
  8. 1 t salt or to taste


First peel your jicama and shred it together with zucchinis. Put them in nutmilk bag and squeeze out as much water as you can. Then put them in the bowl. In vitamix blender or coffee grinder grind pistacios, peas and corn until flour like, add them to bowl and mix well. Then add all the spicies, mix again and finally add psyllium husk powder evenly across the mix and mix for the final time. Let it sit for 5-10 minutes.  Have  your dehydrator sheet next to you and start making little balls from the mix by hand. Once done put the balls into dehydrator on 115 F for about 3-4 hours.

For the sauce add all the listed ingredients into blender and blend until warm and creamy.

Once balls are ready put desired amount in the bowl, add sauce and voila! Enjoy!
