My favorite low fat raw vegan sushi

One day I went out with my husband to eat some raw food. It was yummi salty, fatty goodness as I was expecting but next day I had horrible headache all day. Since I had been lower sodium for a while I figured that it was from all the salt I ate. Still, even though my headache was horrific I felt inspired to create my own low fat low sodium version ย of yummi sushi I got in restaurant. So that’s exactly what I did! And it tastes amazing! This recipe makes about 5-6 rolls.

sushi rice:ย 

  1. Half of large jicama
  2. 1 medium sized zucchini
  3. 1/2 avocado mashed
  4. 1/2 tsp ginger powder
  5. 1 tsp garlic powder
  6. 1Tsp onion powder
  7. 1 Tsp psyllium husk powder

my favorite filling:ย 

  1. 1/2 red or orange bell pepper cut into thin stripes
  2. 1/2 cucumber cut into thin stripes
  3. green onion cut small
  4. fresh mint leaves ( about 4 for 1 roll)

my husband’s favorite filling:

  1. 1/2 avocado sliced thin
  2. green onion cut small
  3. fresh mint leaves

for dipping:ย 

  1. 1 Tsp of fresh lemon juice
  2. 1 Tsp of bragg’s liquid aminos or any of your favorite soy sauce, tamari


Okey ๐Ÿ™‚ for sushi rice shred your zucchini and jicama, put into nutmilk bag and squeeze out all extra liquid. Then put it into bowl and add in the spices, mix, add mashed avocado, mix and finally psyllium husk powder and mix for the final ย time.

Cut your veggies, get your sushi mat ready and start rolling ๐Ÿ™‚ everybody seems to have their own way or rolling sushi. I just put some sushi rice on second and third nori stripe and then add my veggies on top of that. I roll it and use lemon juice to seel sushi roll. For cutting I just use sharpest knife I have. Wetting it before helps too.

Once ready, mix your dipping sauce in the tiny bowl and enjoy ๐Ÿ˜‰

for my little ones I just put rice and cucumber into sushi, they LOVE my sushi ๐Ÿ˜‰
